Today my six-week menu said that lunch was Pizza with either bacon or sardines!
I had some bacon in the freezer so I decided to finish it up.
My food processor can cope with enough dough for thee pizzas, so I made three bases.
I cooked two of the bases for five minutes and will then freeze them for another day (or two!).
The other one was for lunch today and so I added pesto. (I used to use tomato puree but don’t eat tomatoes any more.)
Then a sprinkling of grated cheese.
Added mushrooms (normally they show up more but I only had some ones I had frozen and maybe not enough.)
A good helping of frozen sweetcorn and some chopped garlic.
Cut up my frozen streaky bacon and distributed all over.
Added more grated cheese and topped with plenty of olives. (I love olives.)
Today is hot with a knife and fork, supper tomorrow will be cold with my fingers. Not sure which I like best!
