Spicy, Nutty, Banana Bread – recipe

The other day I made some spicy, nutty, banana bread. (The day I posted about the yarn in fact!) and today I made some more because I hadn’t realised that the baking powder from Waitrose was more diluted than the one I was using before and the bread didn’t rise as much as it should. Also I wanted to take another couple of pictures for this post.

I have always liked banana bread and this time I decided to put together my own recipe for a banana bread that was tasty, relatively healthy and with a pleasant texture.

Recipe

First grease and line a 2lb loaf tin.

Then in a bowl put
8oz (225gm) wholemeal flour
some teaspoons of baking powder, check your tub and use the amount for 8oz flour. (They are not all the same and I was caught out that way – see above).
½ level tsp cinnamon

Mix very well or sift together.

add I teaspoon coriander seeds crushed (if you have them)

and add
2oz walnut pieces – break up any large pieces.

In a saucepan you melt

2oz (55gm) butter
6 tablespoons of honey

In a separate bowl you mash two medium (or one very large) very ripe bananas.
They should look like this (or maybe even riper).

A few small lumps are okay and add a beaten egg.

You then pour the melted ingredients into the bowl with the banana and egg.

Add to the dry ingredients and mix gently.

Put in the loaf tin and flatten the top.

Then into the oven for 30-35mins at 170 deg C (325 deg F) [Mine is in a fan oven].

[Maybe 180 deg C (350 deg F) and 40-50mins for a conventional oven.]

And Voila!

This makes a moist crumbly banana bread that doesn’t need extra butter.

Short recipe

Dry ingredients mix in a bowl.

  • I teaspoon coriander seeds crushed (if you have them)
  • 2oz walnut pieces – break up any large pieces.

  • add a beaten egg.

Add melted ingredients to banana & egg and mix

Then add to dry ingredients, mix gently
